Spelt, also known as Dinkel (the German name) is closely related to wheat and thus well suited for bread-baking. You can make tasty, healthful bread from whole grain spelt flour, like our spelt seed bread, for instance. Spelt flour can be used to make pasta, cakes, biscuits, pastry or any other recipe usually made with wheat. One of the oldest of cultivated grains spelt is naturally high in fibre. It is also high in B complex vitamins, and both simple and complex carbohydrates.
